Ingredients
- 2 tbsp butter
- 1 small onion
- 1 carrot, small dice
- 1 tsp salt
- 1 cup brown rice
- 2.5 cups water
- Melt butter over low heat, then add the onion and carrot. Cook for 4-5 minutes.
- Add the salt and rice, and toast the rice for 2 minutes.
- Add the water, bring to boil, then simmer for 45 minutes.
- Fluff and eat!
